Microgreens

Microgreens are young seedlings of edible vegetables and herbs that are harvested 14 days after germination. These tender, tiny greens become the plants’ first set of leaves and are typically between one to three inches. They are formed in the seed and have the same photosynthesis process as leaves - they convert light energy into chemical energy for growth. The leaves and stems of the microgreens are edible and they are grown in soil or peat moss, one of the many aspects that make them different from sprouts, the soil is what gives the plant nutrients. They typically take one to three weeks to grow, depending on the plant. They require a lot of sunlight and good air ventilation. Depending on the variety, microgreens are more concentrated in nutritional value than their mature counterparts - giving them their super power.
Microgreens have exceptional flavour and texture, you can often see them used as garnishes in restaurant dishes. Some of my personal favourite microgreens are: Pea Shoots, Sunflower Shoots, Broccoli Brassica Blend and a Mellow Mix (which is usually a combo of different mild-flavoured greens). They can easily be added to a sandwich, wrap, stir fry, pasta, smoothie, juices, salads, pesto and the list goes on.
Nutritionally microgreens, variety dependent, are rich in vitamin A, B, C and E, Calcium, Chlorophyll, Iron, Magnesium, Niacin, Phosphorus, Potassium, Dietary Fiber and Amino Acids.
If you’re new to microgreens, start by choosing greens from vegetables you already enjoy or if you don’t enjoy vegetables start with a pea or sunflower shoot. Sunflower shoots have a nice crunch and nutty texture aka not very “green” tasting. Pea shoots are crisp and tender with a sweet pea like flavour (I promise they’re more enjoyable that green peas). Slowly incorporate a generous handful into a salad and then branch out from there. Microgreens have more substance that lettuce greens and can really hold their own in a sandwich or wrap, they have more substance and don’t easily become wilted or limp.
This salad beautifully highlights the flavour and texture of these microgreens. The addition of complimentary flavours and textures creates a balanced, nutrient dense salad. This can be served as a side or as an entree; the nuts, peas and Parmesan help to provide protein and healthy fats which will keep you satiated.
